Follow on Google News | New Executive Chef Heats Things Up at Brookstone Grille in Derry, NHChef Kevin Riley returns to home state to provide an ‘outstanding dining experience’ for guests
By: LTD Company Riley is excited to join the team at Brookstone Park. “I have spent the last 10 years working for five-star hotels and resorts, like the world-renowned Bellagio in Las Vegas,” he said. “Now I have the opportunity to use my experience in my home state to enhance the dining scene and share my passion for great food. I believe I can offer an outstanding dining experience with reasonable prices.” Riley already has big plans for Brookstone Grille’s menu. “I like to incorporate seasonal ingredients and cook with care,” he said. “There are a lot of chefs who overanalyze food and try to complicate cooking with too many ingredients on the plate.” During this time of year, Riley enjoys cooking with brussels sprouts, sunchokes, pomegranate, quince, pumpkins, and all the warm flavors of fall and winter. “My favorite menu item right now is the slow-roasted pork rack with butternut squash puree, bacon-braised brussels sprouts, cider gastrique, toasted walnuts and shaved apple salad,” Riley said. Riley loves the facility at Brookstone Park. “I enjoy the fact that both the ballroom and the dining room are the perfect size for me to be hands-on with all events, whether it’s two people having dinner or 200 people enjoying a wedding,” he said. Riley has more than 18 years of experience. He started his professional career at the Four Seasons Hotel Boston. He later moved west, taking a job as sous chef at the Bellagio Hotel in Las Vegas. During his three-year tenure, Riley cooked in many different outlets, including in-room dining and VIP villas, as well as executive sous chef at Todd English’s Olives Restaurant. He went on to work for AquaKnox in the Venetian Hotel in Las Vegas and most recently served as executive chef for the Westin Hotel Tampa Bay in Florida.
