TUSCA RISTORANTE HIRES NEW CHEF

Chef Johnny De Vivo joins TusCA Ristorante at the Hyatt Regency Monterey Hotel & Spa located at 1 Old Golf Course Road in Monterey.  With a passion for food and life, Chef De Vivo just launched a new lunch and dinner menu at TusCA Ristorante.  In addition he is working with local farmers and has created a monthly Farm to Table menu that change with nature’s ingredients.

Chef DeVivo grew up in a family of cooks and worked in his families Italian restaurant.  In order to pursue his culinary dream, he moved to Las Vegas and worked at Bellagio’s famed Piccasos and Ciro restaurants.  He was also Sous Chef at Alize on top of the Palms Las Vegas Hotel when the restaurant was awarded one Michilin star!  In 2007, he moved back to Utah to take over the family restaurant  Scaldoni’s prior to moving to Monterey.

Pan Roasted Salmon with Pine Nut Crust

Ingredients
6oz salmon
Pine nuts                                                                        
Parmesan
Panko (Japanese Bread crumbs)
Egg
Flour
Salt
Pepper                                                                                          


Instructions
Fish-In a large skillet add olive oil until hot. Season the fish with salt and pepper and place the fish skin side down. Remove the fish from the pan and allow it to dry.
Crust- in a zip lock bag place the pine nuts, parmesan & Panko and pound with a flat heavy object.
Egg wash- in a bowl wisk the egg and flour together into a glue consistency.
Finish- Once you sear the fish remove from the pan, add the egg wash and then the topping. Place the fish crust side up in a 400 degree oven for 7-10 minutes. Remove the fish from the oven and finish with a squeeze of lemon.
