The new rule, which will become law in August of 2014, dictates that food products bearing any gluten-free label must contain less than 20 parts per million (ppm) of gluten. This is the level deemed to be safe for consumers suffering from Celiac Disease or from an intolerance to gluten. However, the line of snacks made by El’s Kitchen is actually tested to a higher degree, and all show gluten levels of less than five parts per million. Gluten is a protein found in wheat, barley, rye, and sometimes oats, and it can interfere with the ability to absorb necessary nutrients from food.
