After annalising energy costs the Michelin Star Balmoral Hotel, Edinburgh choose to switch from gas to induction cooking in order to cut the costs.
 
June 16, 2010 - PRLog -- When The Balmoral Hotel, Edinburgh, looked at the gas consumption in their kitchens, it highlighted a massive ongoing cost.

How could energy consumption be reduced they asked?

Induction cooking was the answer for them, but the initial cost of induction was high. True running costs and potential savings needed to be monitored and quantified. The hotel's engineering department was tasked to investigate and provide a financial review, indicating a cash flow forecast payback time for the initial capital investement to reduce energy costs.

In consultation with Chris Davies from Induced Energy, specialist commercial induction cooking equipment manufacturers and Target Catering Equipment stainless steel manufacturer for over 20 years, the Balmoral Induction Cooking Range was designed and produced to deliver these savings.

Projected payback time was was 9 months, which was thought to be unbelievable. In fact it proved to be less than this.

The Balmoral Hotel is now on a scheduled program to replace all gas ranges for induction range cooking stations, designed by Target Catering Equipment using the very latest commercial induction from Induced Energy.
