According to Kabbalah, Rosh Hashanah commemorates the culmination of the creation of the universe and also the acceptance of God’s sovereignty over the world. At the evening feast of Rosh Hashanah it is a custom to eat an apple dipped in honey and other sweet foods to symbolize a sweet new year. Apples and honey should be placed on the table in a Jewish home during the entire month of Elul, leading up to Rosh Hashana on the first day of Tishrei.
