Production area
The Wine Greoco Doc  Sannio Bioitalia is produced on grounds which lie between 80 and 100 meters above sea level, of sandy or sandy-clayish  nature , poor in organic  substances,  derived from the break –up of sandstones.  The  position is in a steep slope and the exposure is south-westerly.


Vineyard and Vineyard management

Greco 100 %
25 yrs old vineyards planted at espalier , with 2500 vines per hectare, managed according  to the method of organic farming since 1994.
The pruning method is by spurred  cordon. Production per hectare  of  2009 61 quintals, equal to 2,5kgs per vine

Vinification

Manual picking  of the grapes starting from September1st on,  crushing and destemming followed  by a soft pressing  decanting of the must at 10 ° c for 24 hours , decanting and fermentation in  steel at a temperature of 15 °
After the first  decanting  the wine is refined on the noble dregs  until the month of February  , then it is filtered, it undergoes the stabilization at 4 ° c and then is bottled
