New Jersey Catering Companies Cook for a Cause

April 11, 2012 - PRLog -- Neptune, NJ – On Tuesday, April 10th, 2012, New Jersey personal chef service and catering company Foodini’s teamed up with DRJ Catering of Toms River, NJ to host an event at Monmouth University in West Long Branch, NJ that commemorated the 100th anniversary of the sinking of RMS Titanic.

Chef John Deatcher of Foodini’s Catering collaborated with Chef David Keith to recreate the original “First Class Dining Saloon's” menu found on the Titanic.  They used the original classic French recipes but also added their own twists on the presentation.

"The idea was to give guests the culinary experience that a typical first-class passenger might have on the Titanic, but put a modern twist on the presentations.  It was a new, innovative way to provide insight into the Titanic’s voyage", said chef John.

The difference between what was served on the Titanic and what was served on Tuesday was simply the way in which the people consumed the food.  On the Titanic, it was a full service plated dinner.  At this event, the menu was re-designed to accommodate a Passed Hor d’Oeuvres and Stationary Hors d’Oeuvres setting.  Some of the hors d’Oeuvres that were served included Oysters a la Russe, Calvados Glazed Roast Duckling, and Poached Salmon with Mousseline Sauce.  Some of the desserts included were Waldorf Bread Pudding and Chocolate Painted Éclairs.

Chef John has been in the restaurant industry for 23 years and has been the owner of Foodini’s Catering and Personal Chef Service for 13 of those years.
