By: Eaton Smart, Hong Kong Our Michelin-starred Chef Tam Tung and Naturopathic Medicine Professionals Ms Angel Tong collaboratively present you the nourishing Cantonese menu of “Angel’s Choice” – The Bird’s Nest & Fish Maw Royal Feast (HK$480 per person). Developed from “Be pretty” concept, premier ingredients such as Bird’s Nest and Fish Maw have been selected to help all ladies eat healthily. “Many ladies deeply believe the concept of light diet with little portion to achieve skin nourishing purpose.” said Chef Tam, “However, this Bird’s Nest & Fish Maw Royal Feast jointly created with Ms Tong will surprise you.” Looking into the menu of this Feast, all items are definitely different from traditional slimming diet. For examples, Roasted Eel in Honey Sauce is crispy with al Dante flesh; deliciously black fungus is full of mustard flavor; royal presentation of Fried Prawn in Young Coconut topped with Gold Foil infuse with a richness of egg white; stir-fried assorted bell pepper makes the chewy texture of fish maw stands out; and not without the nourishing Double-boiled Whole Papaya with Bird’s Nest in Almond Cream. Chef Tam integrates the idea of “Angel’s Natural Diet” in the Bird’s Nest & Fish Maw Royal Feast, selecting seafood as staple food with quality vegetables. Ms Tong explains that it impacts human’s stomach when stomach digests alkaline and acid food at the same time. Food that cannot be digested will transform into fat. Therefore, Ms Tong suggests we should only take one kind of staple food per meal like grain, carbohydrates, seafood or one type of meat. However, Cantonese normally consume carbohydrates and meat together that conflicts the idea. Therefore, this jointly designed special menu with Chef is totally an untraditional but impressive one. Supreme Royal Selects Besides the jointly designed Royal Beauty Feast with Ms Tong, Chef Tam also presents you various supreme Royal dishes, including Doubled-boiled Papaya with Fish Maw and Supreme Bird’s Nest; Minced Pumpkin Broth with Shredded Fish Maw and Bird’s Nest; Steamed Egg White and Bird’s Nest Custard with Sauteed Prawn topped with Gold Foil; Braised Whole Fish Maw in Abalone Sauce; Scrambled Egg White with Shrimp, Bird’s Nest, Fresh Crabmeat and Crab Cream; Pan-fried Pi-pa Beancurd with Bird’s Nest in Black Truffle Paste; Braised Bamboo Pith Stuffed with Supreme Bird’s Nest and Asparagus; and Stir-fried Fish Maw with Celery and Assorted Pepper. * Subject to 10% service charge * Promotion is valid from 18 June until 31 August, 2012 About Yat Tung Heen The renowned Cantonese restaurant presents an extensive menu of traditional Cantonese cuisine in elegant and contemporary surroundings.
