The restaurant was started by Ralph Pesqueira Sr. as a tortilla factory. Ralph Sr. was happy making tortillas for other restaurants when he started and even built the first tortilla making machine in his basement between 1945 and 1946. He was only able to produce 30 dozen tortillas per hour so he invented his machine and increased production to 30 dozen per hour.

He began making lunch items after a group of workers from the Convair plant asked him to prepare lunch items for them. It was at that point that Ralph created the taquito, which means little taco. Those taquitos rapidly became very popular and today almost all Mexican restaurants serve them.

Over the years the restaurant has expanded to include a garden patio and a patio area across the street from the main restaurant. People enjoy eating great Mexican food while enjoying the patio across the street with an abundance of sunshine.
