Siem Reap has colonial and Chinese-style architecture in the Old French Quarter, and around the Old Market. In the city, there are traditional Apsara dance performances, craft shops, silk farms, rice-paddy countryside, fishing villages and a bird sanctuary near the Tonle Sap Lake. Siem Reap today, being a popular tourist destination, has a large number of hotels and restaurants. Angkor Wat temple is the central feature of the Angkor Unesco World heritage site containing the magnificent remains of the Khmer civilization. Angkor Wat's rising series of five towers culminates in an impressive central tower that symbolizes mythical Mount Meru. Thousands of feet of wall space are covered with intricate carving depicting scenes from Hindu mythology. Ha Long The bay consists of a dense cluster of over 3,000 limestone monolithic islands each topped with thick jungle vegetation, rising spectacularly from the ocean. Several of the islands are hollow, with enormous caves. Hang Đầu Gỗ (Wooden stakes cave) is the largest grotto in the Hạ Long area. French tourists visited in the late 19th century, and named the cave Grotte des Merveilles. Its three large chambers contain large numerous stalactites and stalagmites. There are two bigger islands, Tuan Chau and Cat Ba, that have permanent inhabitants, as well as tourist facilities including hotels and beaches. There are a number of beautiful beaches on the smaller islands. Luang Prabang the city was formerly the capital of a kingdom of the same name. It had also been known by the ancient name of Chiang Thong Until the Communist takeover in 1975, it was the royal capital and seat of government of the Kingdom of Laos. It is a Unesco World heritage site. The main part of the city consists of four main roads located on a peninsula between the Nam Khan and Mekong rivers. The city is well known for its numerous Buddhist temples and monasteries. Every morning, hundreds of monks from the various monasteries walk through the streets collecting alms. One of the major landmarks in the city is a large steep hill on which sits Wat Chom Si. Many of the local ethnic groups are known collectively in the West as Montagnard or Degar. The largest ethnic groups are: Kinh (Viet) 86.2%, Tay 1.9%, Tai Ethnic 1.7%, Muong 1.5%, Khmer Krom (Khơ Me Crộm) 1.4%, Hoa 1.1%, Nung 1.1%, H'mong 1%, others 4.1% (1999 census). Vietnamese food is known for its balance of five foundamental taste senses in each dish or the overall meal: spicy (metal), sour (wood), bitter (fire), salty (water) and sweet (Earth) Common ingredients include fish sauce, shrimp paste, soy sauce, rice, fresh herbs, fruits and vegetables. Vietnamese recipes utilize lemongrass, mint, long coriander, bird's eye chili, lime, and Cinnamon basil leaves. Traditional Vietnamese cooking is greatly admired for its fresh ingredients, minimal use of oil, and reliance on herbs and vegetables. With the balance between fresh herbs and meats and a selective use of spices to reach a fine taste, Vietnamese food is considered one of the healthiest cuisines worldwide Lao cuisine which is distinct from other Southeast Asian cuisines. Laos shares borders with neighboring countries and as a result, Lao cuisine has strongly influenced (and been influenced by the neighboring cuisine of Northeastern Thailand and some Lao culinary influences have also reached Cambodia and Northern Thailand The staple food of Laotians is steamed sticky rice which is eaten by hand. In fact, Laotians eat more sticky rice than any group or people in the world sticky rice is considered the essence of what it means to be "Lao"—many Laotians even referred to themselves as, "Luk Khao Niaow", which can be translated as, "children/descendants of sticky rice". Galangal lemongrass and padaek (Lao fish sauce) are important ingredients. Most Cambodian dishes don’t require you to purchase any special tools. However, having a coffee grinder helps with roasting and grinding spices and maximizes their volatile oils, which, in turn, provides your food with more flavor. While rustic cooking methods are also very appreciated, they are mostly reserved for restaurants that wish to impress their clients with a traditional meal. In most places, Cambodian cooking uses the same standard instruments used in many European countries or in the United States of America. Ranging from cake pans, can openers, colanders, egg rings, poachers and holders, food dishers & portioners, food pans & food containers to other kitchen utensils, such as food scales, food scoops and fryer baskets & accessories, the Cambodian cuisine needs a diverse cooking equipment set in order to produce the most sophisticated Cambodian dishes. Essential utensils like serving spoons, spatulas, forks, turners, scrapers and tongs should also be part of your cooking “toolbox”. Here are a few other items that will come handy while cooking Cambodian food: juicers, kitchen knives, kitchen slicers, kitchen thermometers, measuring cups & measuring spoons, miscellaneous utensils, mixing bowls and skimmers & strainers.
