Pure Indian Foods Supports Community Education through Service to Rutgers University Students

Pure Indian Foods recently completed its fourth year of offering its services and insight to students studying nutrition at the university.

As part of each semester-long project at the university, members of the small Pure Indian Foods staff present a production concern or new product for the students to consider. The staff works with the students, answering their questions and challenging their thinking about food production, marketing and distribution.

Pure Indian Foods’ most recent interaction with the students involved the presentation of a product slated for introduction to the public, organic jaggery. Popular in South Asia and Latin America and similar to muscovado sugar, jaggery is an unrefined dark brown sugar made from palm tree sap or sugar cane. Jaggery is chockfull of minerals and has a rich, satisfying flavor similar to molasses.

With the guidance of Pure Indian Foods and Rutgers faculty, the students analyzed the possible applications for organic jaggery as well as its health benefits. The students ate samples of jaggery and devised various applications for the product, including cutting jaggery into cubes for use in preparing coffee and tea. Year after year, the projects proposed by Pure Indian Foods have challenged the students’ thinking about food and encouraged them to learn more about every aspect of food production.
