Tradition with a twist. Erica Nelson, Quality Assurance/Quality Control, and Joey Justice, head brewer, devised the recipe. Joey believes wholeheartedly in the addition of ginger to the traditional ingredients, notably orange peel and coriander. Unwilling to take credit for the recipe, he said, “It was a collaborative effort from John (John Lyda, brewmaster) and Paul’s (Paul Rollow, brewer) earlier recipes. I learned a lot from them. Erica suggested ginger and cumin. The whole point of this beer for me was the ginger. The credit goes to everyone here, from brewing to packaging to shipping.” Razor Wit is available from June through August in all areas of Highland’s distribution. Like all other Highland seasonal beers, the Razor Wit name honors the Southern Appalachian landscape. The public is invited to hike Buncombe County’s Razor Mountain on the evening of August 9, led by a naturalist from Southern Appalachian Highlands Conservancy (SAHC) and Highland staff members. With each seasonal release, money is donated to SAHC to further its efforts in land conservation, and information about SAHC is added to every seasonal 12-pack.
