Before canning, collect –

Saucepan

Pint jars

Canning funnel

Vacuum lids and rings

Hot water bath canner

Knife

Towels etc.

Bring the following necessary ingredients –

Peppers (7 pounds)

Sugar (3 ½ cups)

Vinegar ( 3 cups)

Water (3 cups)

9 cloves of garlic

Canning salt (4½ teaspoons) etc.

Follow the procedure –

Wash the peppers.

Sort them.

Remove the seeds and stems.

Cut the peppers into strips.

Bring water, vinegar and sugar to boil in a large saucepan.

Add peppers into it.

Bring the mixture to boil for second time.

Into the pint jars, put 1 clove of garlic and canning salt (½ teaspoon).

Add the pepper strips by using canning funnel.

Cover the peppers by pouring vinegar into each jar.

Leave ½ inch headspace.

With the towels wipe the rim.

Finally adjust lids.

Process time at altitudes of –

up to 1,000 ft – 5 minutes

1,001 to 6,000 ft – 10 minutes

Above 6,000 ft – 15 minutes
