The series, which will feature both in-house and local chefs, sommeliers, bartenders and mixologists, is intended to present a platform for culinary professionals to exhibit their unique talents. From tacos to traditional fare, accompanied by outstanding wine, cocktail and beer selections, the pop-up dining series aims to bring the best of Chicago’s dining diversity into the hotel for the pleasure of its guests. According to Jeremy Baras, the president of PopUp Republic, a leading social media marketing company that specializes in pop-ups, the concept is creative and captures the appeal of the trendy pop-up movement. “My family recently visited Paris for a week-long holiday. Before embarking, they contacted their hotel’s concierge and asked that he make dinner recommendations and arrangements for some Parisian hotels he favored. This is what usually happens — hotel guests elect to leave the hotel in search of restaurants favored by the locals.
