Among those scolded were Champlin's Seafood of Point Judith, for its lobster roll, served on, heaven forbid, "a hot dog bun,” Haven Brothers, in Providence, for their "impertinent attitude," The Black Pearl, Newport, for its plain-broth clam chowder, and Angelo's of Providence, for the "common" pasta presentation. Ah, the snobbery inherent there. That's why we do not ascribe to giving food critics the power to make or break a restaurant, or to their denunciation of some regional cuisine and exhalation of others. There are enough restaurants and cooking styles in the world to interest everyone and it is my belief that professional critics should concentrate on the ones they like and present their criticism of those constructively. There's enough negativity and schlock in the world without bringing it to the dining table to sink in your gut like a greasy donut. Besides which, Rhode Island cuisine holds its own, especially as concerns seafood. While this book concentrates on traditional Rhode Island and New England shellfish recipes, it also includes a few from other regions of the United States that celebrate America's shellfish cooking heritage. When Rhode Island native, Timothy "Ol' Swamper" Gilchrist, of Charleston, developed his, "Gilchrist Shellfish Griller", he added a new dimension to cooking shellfish. He asked me to help put a few recipes together for his website. A few recipes developed for the "Gilchrist Shellfish Griller," turned into many because the refrain while creating and testing them was the same as that repeated by all clam-diggers standing in the water with rake in hand, -"Just one more!" -EL We hope you find a few favorites here and encourage you to expand upon these recipes and to develop some of your own.
