Follow on Google News | Yongehurst Distillery Co Set to Release Toronto's First RumHarbour Rum Harbour Rum takes its name from some of the earliest known maps of Toronto, which displayed three major landmarks, the city's first five Wards, the surrounding region designated as "Liberties", and the Harbour. Harbour Rum is Toronto's first locally produced rum. The rum is fermented, distilled and bottled on site at the distillery in Toronto using certified organic grade "A" molasses from South America. The distillers use a wild yeast, originally harvested off a Russet apple here in Southern Ontario, to give this rum it's unique local flavour. The molasses and yeast ferment into an incredibly fragrant beer, smelling of apples, cranberries and bubble gum, that's then distilled into rum on one of the distillery's two copper and stainless-steel stills. The duo who run the distillery didn't set out to sell white rum as their first product. Instead they only planned to distill the rum to fill ex-bourbon barrels currently aging in the distillery's back warehouse, which will be for sale later this year. But after tasting the unaged rum right off the still, they immediately realize their rum was unlike any white rum they had tasted before, deciding this would be their first product to hit Toronto's cocktail-loving market. Harbour Rum is unfiltered and has a distinctly sweet aroma, with notes of apple and mint on the palate. Unlike traditional white rum, Harbour Rum is full bodied at 44% alc./vol. and perfect for blending into cocktails or shaking into tiki drinks. The distillery will also carry a line of hand-crafted soda syrups that include cola, ginger beer and tonic, for those that prefer to keep their drinks simple. Packaging The bottle's packaging features a street map of present-day Toronto interwoven into the cross section of a tree. That imagery is overlaid with a simple heavy textured dual-coloured paper, with the company's brand name in gold. The branding and packaging was designed locally by Toronto's Monograph Design. Release Notes The distillery is located at 346 Westmoreland Ave N, in the Artisan Factory building off of Geary Ave, one street north and west of the corner of Dupont and Dovercourt. The distillery will sell their house spirits and other related products through their retail store every Friday, Saturday and Sunday. This comes ahead of their full scale grand opening early this summer, which will feature retail, tours, a patio and a tasting bar. Yongehurst Distillery will be selling a limited number of 375ml bottles from Batch #1 this weekend, starting Saturday, May 14th from 12 pm to 6 pm and Sunday, May 15th from 1 pm to 5 pm.
