Antonio attended culinary school and did his first training in Piedmont, Northern Italy, where he worked with local products: truffles, braised meats and acclaimed wines (Barolo, Barbaresco). Antonio then gravitated to the Ligurian seaside, working directly with day boat fisherman. In Rome, he worked in Michelin-starred restaurants, Il Convivio, Glass Hostaria and Acquolina, refining his skills and love for the most traditional of Italian products: pasta. Antonio perfected Roman pizza and bread making at the famous Roman forno (bakery), Roscioli. The bread and pizza dough are made fresh daily at VIA VAI, where it is skillfully given time and space to leaven to perfection. VIA VAI uses only the finest Italian products –olive oils, wines, salumi and cheeses sourced from traditional producers in Italy – to produce and serve top-notch artisanal food, embodying the culture of his homeland. Antonio will personally prepare your meal in the "slow food' tradition of the finest Italian cuisine. He also will help you choose the best Italian wines from his extensive cellar to best accompany your meal and please your palate. Morichini's home-made pastas are produced daily. They come in all forms and in different flours to satisfy every taste. The pastas are cooked express and marry to perfection with their accompanying customized sauces. His pizzas are fresh out of the brick oven and use the finest ingredients, including his delicate tomato sauce. The meat and fish dishes are a cut above many other establishments – they are made express at the time the order is received in the kitchen, and are accompanied by side vegetables. Time and love is put into each dish, and you can't help but notice that. Risottos take at least 25 minutes at VIA VAI! It is his quest to make every meal the leaves his kitchen, an authentic Italian dining experience, and every meal can be finished with one of his homemade desserts, including any one of the fruit based ice creams where you taste the fruit itself.
