Chef Activist Shinobu Namae Wins Asia's 50 Best Restaurants Icon Award 2023

TOKYO, Japan - Feb. 24, 2023 - PRLog -- Executive Chef Shinobu Namae of three Michelin star restaurant L'Effervescence has been announced as the winner of the Icon Award ahead of Asia's 50 Best Restaurants 2023 Awards on March 28 in Singapore.

Namae was selected by an academy of 300 voters comprised of chefs, food journalists and experts across Asia for his purveyor-driven approach to gastronomy and deep understanding of sustainability.

The Icon Award celebrates an individual who has made an outstanding impact on the food industry and uses their platform to affect positive change in the world. During the pandemic, Namae decided to further his education by obtaining a Master's degree and conducting research on what we should eat to create the future we want to see. In 2022, Namae represented Relais and Châteaux and delivered a speech at the World Oceans Day conference in New York about the importance of revitalizing the oceans' health.

At L'Effervescence, Namae is purposeful about working with Japanese purveyors and bridges the connection with guests by providing a list of farmers who supplied the vegetables of the day. Last year, he developed a forward-thinking pescatarian menu in collaboration with Chef Kyle Connaughton from SingleThread Farms in California, to show the future of gastronomy from a Japanese perspective. Namae aims to improve the world, one bite at a time.
