Digg's Restaurant & Bar NOW OPEN in Huntington Beach

Oct. 8, 2010 - PRLog -- Huntington Beach, California – Digg’s Restaurant & Bar, a new international fusion concept, has opened near downtown Huntington Beach. Digg’s is a contemporary and upscale yet casual and welcoming restaurant featuring everything from gourmet burgers and salads to USDA Prime steaks and seafood.
   
Digg’s features a sleek modern-industrial look with decorative slate tile and metallic stone, black pinstripe dining booths and red accents throughout. The chic design is complemented by more relaxed details reminiscent of the local beach culture with surf art and photography as well as eight HD plasma screen televisions, set to rotate between Fuel TV, music videos and sports. Some key artistic details in the 5,200-square-foot restaurant include a glass waterfall at the entrance and a metallic-glass tiled wall. The focal point will likely be the VIP dining area sectioned off by a custom-made wall with various illuminated circular cutouts.  

The menu focuses on the finest international cuisine with dishes like Dakine – tender-sliced, marinated beef in a Mongolian sauce, and Digg’s Deep Pow – lightly breaded chicken or halibut chunks sautéed in Digg’s Asian sauce. Other options include Honey-Glazed Salmon, Alaskan Crab Cakes and a Brandy Pepper rib eye. The menu also offers a variety of appetizers such as Roasted Garlic, Coconut Shrimp and Seared Ahi sashimi. One of the most unique and likely to be ordered items are the Brazilian Acai Bowls – the exotic berry and other fresh fruit topped with granola and drizzled with honey. The lunch and bar menus will offer some items from the main menu as well as an assortment of sandwiches and burgers.

Not only does Digg’s have the food, it also has a unique story. Owner Phil Mack Chung comes from a background of restaurant owners with his dad, a chef of more than 30 years, at one point running 12 restaurants. After moving here from Lake Tahoe to help his dad during a sickness, Chung was inspired by local culture and dining experiences and wanted to carry on the family tradition in this environment.

“I wanted to build a restaurant that represented me, the people in my life and HB,” Chung said. “Laid back, healthy, great music, drinks and amazing, unique food. Everything you dig is at Digg’s.”

Trying to use all his resources to make it happen, Chung was able to pull together a skilled slew of friends to handle everything from carpentry and painting, to running the kitchen and bar. And what started out as a dream soon became a reality. Longtime friend, Dion Grant, teamed up with Chung to design and build out the restaurant interior, from constructing the waterfall and VIP booth, to wiring, and installing countertops. Later on another friend, Jeff Dickson, moved to town, helped author the menu and will serve as Executive Chef, having cooked in fine dining establishments all over the country including Anchorage, Phoenix and Lahaina, HI.  

“I feel like I mostly directed the ambiance, but Dion (Grant) is definitely the heart and soul of this place – it should be called ‘Dion’s’,” he said. “And then Jeff (Dickson) was the finishing piece to the puzzle.”   

The trio and a handful of other friends combined various skills, trades and an eagerness to help in order to complete every detail. They even went out and surveyed the area to decide on the name, unsure of whether it would translate over from how they used the term growing up – which basically means all the things you love in one place: ‘these are my digs’ as they say.

Digg’s will also offer outdoor dining, a full bar, and a happy hour menu to satisfy the casual after work cocktail or the perfect ale to enjoy while watching the game.
