The concept is issued from chef Philippe Feret's birthday evening event, when his New York city friends, staff and family surprised him with a memory-filled succulent Paella.

Needless to say how hard it is to please a chef... Especially on a culinary note! On that aspect of things, while using the staff Spanish heritage, coming up with the best Paella recipe was not that much of a challenge for his New York's entourage.

Effectively, New York City abounds with Spanish heritage; you would think there would be a Seafood Paella Fiesta every street corner! Well, not really, hence how the idea of a Paella Celebration occurred in the mind of New York's Brasserie Julien chef.

Seafood broth from shrimp heads, onions, garlic and bay leaves. Steamed mussels,sauté lobster, deep-water rose shrimp, monkfish, tomato, paprika and saffron rice.
