By: SLK Creative A well-seasoned chef with an impressive resume that includes way too many restaurants to name, Bracero is stirring things up by mixing his eclectic style into CDG’s already ample menu options. Not only will he be adding Vietnamese and Korean touches to existing dishes and nightly specials, but even more exciting, Chef Bracero will create and serve an over-the-top assortment of sushi, sashimi, and Japanese offerings. Items such as Poke, sushi/sashimi combinations, and charred edamame will satisfy the most selective palate. Using the highest quality ingredients, Bracero continues to raise the bar on culinary excellence, which is the foundation upon which Chow Down Grill has been built. He’s particularly selective when it comes to sushi rice. He creates his own, choosing a blend of semi-polished and fully polished rice, which creates a sweeter taste and a more textured feeling. He also uses pearl rice puffs, which are a healthier, less greasy alternative to tempura batter. Owners John Donovan (partner and co-creator of legendary night haunts The Bar in Coral Gables, Purdy Lounge, and recently opened The Blackbird Ordinary) and Chef Joshua Marcus (who’s cooked at BLT Steak, Timo, and China Grill) are pleased to have added Bracero to their neighborhood hot spot. “Customers were always asking if we served sushi, so it seemed only natural to bring Bracero on board,” says Marcus. “Now our customers can enjoy the house-made soy sauce with their favorite rolls.” Guests can expect to see specialty rolls like the Tattooed Dragon Roll, which consists of shrimp tempura, eel, and white asparagus topped off with avocado and pineapple xo sauce or the Spicy Buddha Dragon Roll, which fuses together house made tofu tempura and brocollini, topped off with avocado and spicy mayo. Even the California roll has a special twist - Bracero uses snow crab croquette, avocado, cucumber, radish sprouts and tops it with tobiko and ginger aioli. Having trouble finding the perfect roll? Simply ask Chef Bracero to make anything you’d like – as long as he has the ingredients in-house, you’ll get your fix.
