Follow on Google News | ![]() Tradition Goes On: ‘Pop-up’ Opens at Brasserie PascalOn Tuesday, April 24, Chef Pascal Olhats will open his first ‘pop-up’ restaurant, “The Tradition Room,” at Brasserie Pascal in Fashion Island.
Inspired by his travels, Pascal remembers first visiting a ‘pop-up’ concept while in Paris. Set at the top of a museum, this exclusive dining experience was open for one year with no restaurant listing, no phone number, and just a single table for 12. Located in Brasserie’s bar lounge, “The Tradition Room” will be closed off from the rest of the restaurant and will seat just 25. Featuring a gallery of fine art paintings of Pascal, this ‘ego room’ will have its own exclusive look and feel with new linens, candles, and decor. His signature décor of at Tradition by Pascal of fresh roses will be centered upon each table. “The ‘pop-up’ at Brasserie will be something sexy and very rare, almost like Air France’s business lounge: exclusive and VIP,” notes Brasserie Pascal GM Herve Laveaud. To start, the ‘pop-up’ will be open three nights a week (Tuesday through Thursday) from 5pm to closing. “The Tradition Room” will accept reservations for parties no larger than six. Private parties may rent the entire room for the night for a fee TBD. Pascal will bring the two top servers and two chefs from Tradition by Pascal. To create the “Pascal experience,” Pascal says, “At the closing time of Tradition, besides being sad about the closing, guests would say to me, ‘We were engaged here’; ‘Tradition is a part my life’; ‘We celebrate our anniversary here’, etc. But there was one thing they all had in common. Everyone asked where they were going to find their favorite dish whether it was my sea bass, lamb, or duck confit. So instead of adding a just few dishes to the menu at Brasserie, I thought - why not add the full experience! As the memory of Tradition goes on, I want to not only give my guests the food they love but also the same type of special feeling.” Pascal plans to first test the ‘pop-up’ concept at his restaurant Brasserie Pascal and then Tradition goes on… Pascal will take it on the road, opening ‘pop-ups’ throughout the nation where he will make special chef guest appearances.
