By: IZABEL LAM NEW YORK In 2001, William Grimes awarded a favorable review to the Spice Market Restaurant in New York, where Chef Stanley was Executive Chef - noting that he "has a refined palate and a high sense of adventure..." Born in Germany to a German mother and Chinese father, his parents helped instill in him a deep appreciation for the cuisines of both cultures. He grew to value cooking as a mode of creative expression and worked at award-winning hotels in Germany and Switzerland, including the Grand Hotel Kronenhof and the Michelin two-star Wald and Schlosshotel Friedrichsruhe. He expanded his culinary worldview with jobs at the Palace Hotel in South Africa, and the Mandarin Oriental Hotel in Hong Kong; he supervised seven restaurants at the latter, among them Vong. Together with Christina Hellmann, who will co-host the dinner, the proceeds will be donated to benefit The Joshua Hellmann for Orphan Disease. The Foundation was established in honor of Christina Hellmann's son, Joshua, who lived an active and inspirational life for fifteen years. He passed away in October 2007 after a courageous five-year battle with Melas Syndrome, an "orphan disease", defined medically as a rare disease that is at a result often neglected by the medical and pharmaceutical industries.
