By: Park Hyatt Busan The programme of the Masters of Food and Wine with Chef Edward Kwon consists of a cooking class and a gala dinner. Chef Edward Kwon will unveil the secret recipes of his own signature dishes through his first cooking class in Busan. At the gala dinner, Chef Kwon will present a variety of his cuisine along with perfectly-matched premium wines for every course. Starting with green olives with fresh herb oil, four different amuse bouches of salmon, endive, gazpacho and mackerel will follow in style, along with pan fried scallops, garden salad, truffle veloute, lobster with osetra caviar. After refreshing the palate with sweet cherry sorbet and strawberry noodle, premium beef rib eye cooked at low heat will be served as a main dish. For dessert, vanilla and mango will be prepared. After being Chef de Partie at the Ritz-Carlton Half Moon Bay and Head Chef at Burj Al Arab Hotel in Dubai, Chef Edward Kwon established EK Food. He was also appointed as an Honourary Chef in various Asian countries.
