Weldon received her J.D. from William & Mary School of Law and her B.A. from University of Arizona.

Weldon is very active in her community and nationally in the American Bar Association's Forum on Franchising. She is currently the Finance Officer of the governing committee of the Forum on Franchising and served as the co-chair of the 2020 Annual Meeting of the Forum on Franchising. Elizabeth was inducted into the Fellows of the American Bar Foundation in 2020, and the Litigation Counsel of America in 2017. She is a past president of the board of directors of Girls Inc. of Orange County and also is a supporter of the Boys & Girls Clubs of Long Beach, California.
