Dear Chef Jade,

Thank you again for your interest in joining our team. It has been a pleasure getting to know you and your cooking process throughout our interviews. We are pleased to report that your creativity, work ethic, and passion for vegan cooking have landed you – along with two other applicants - a spot on our shortlist of finalists for the Sous Chef position.

Given our reputation for the unorthodox, it will likely come as no surprise that our methods of choosing our sous chef are rather unique. As you know, we pride ourselves on letting our kitchen staff cook food that is meaningful to them—food that reflects their narrative and culinary journey. We also pride ourselves on serving food that is creatively vegan, while honoring traditional cultural preparations.

This being the case, we will be sending you and the other two finalists on a quest, to make traditional foods the traditional way—using ingredients native to that cuisine. Pack your bags—we're going to be sending you on a trip. That's right, we will pay for you to travel and research the dishes that you prepare (think of this contest as "Iron Chef" meets "No Reservations"), so that you can truly hone your recipes. At the end of your journey, we will taste the dishes that you and the other finalists come up with and choose our next Sous Chef. Good luck, bon voyage, and Bon Appetit!
