For starters Champagne is always in good taste to begin the party, and not bad to continue through the whole affair to be quite honest. From the eponymous region in Northeastern France, Champagne is made from Chardonnay, Pinot Noir and Pinot Meunier grapes that have a significantly high level of acidity, the result of the cool climate conditions of the region. This is important for the production of bottle refermented sparking wine (méthode traditionnelle) as the process takes several years to complete and that high acid level helps to keep the wine fresh and bright through this time consuming and labor intesive technique. The finished product will be super lively with heavy effervesence and a delicate bouquet of tart fruits intermingled with toast and buttered bread. A perfect accompaniment to small bites, good friends and beautiful music.

Burgundy:

The most famous region in the world for Chardonnay and Pinot Noir is located just South of Dijon in the East of France. The so called Cote d'Or, or "Slope of Gold", is made up of a limestone rich escarpment of land that was formed during the plate movements of the earth almost 70 million years ago. It is this soil type that makes the region so unique and inimitable in the wines that they produce. The North section is known as the Cote-de-Nuits after the village Nuits-Saint-Georges and the South the Cote-de-Beaune after the city of Beaune. Whereas the Cote-de-Nuits is known primarily for the Pinot Noirs it produces, the Cote-de-Beaune is famous for both Pinot Noir and Chardonnay.

Napa Valley Cabernet Sauvignon:

Nothing stops the show quite like the rich, textured and juicy Cabernet Sauvignons from sunny Napa Valley in California. Its situation to the east of the coastal range in Northern California ensures fairly arid conditions with ample sunshine, perfect for the late ripening Cabernet Sauvignon grape. Many a storied producer call Napa Valley home, from Caymus to Cakebread, Silver Oak to Dominus Estate.

Vintage and Tawny Port:
