Developed in South Korea in 2004, black garlic is now being produced in the United States using the highest quality Californian garlic. How does the garlic become black?  The all natural process of turning highest quality Californian garlic into black garlic is done without additives.  When the sugar in garlic goes through a heat-based fermentation process, it produces a dark substance called melanoidin, which is the cause of the “black” in the garlic.  Throughout the month-long process, the black garlic is tested several times to ensure premium quality and taste.
