An Evening With Chef Irie Spice

Coral Gables, FL -- July 26th, 2011 – Chef Hugh Sinclair aka Chef Irie Spice, does not miss a beat. Only 3 days after cooking up a storm in New York City at the Grace Jamaican Jerk Festival, Chef Irie Spice is working his way back into the heart of his hometown fans the old fashion way, through their stomachs. This Thursday, July 28th he will be displaying his culinary prowess at the Coral Gables Whole Foods Market from 7pm – 8 pm. The order of the evening, none other than, Mussels Chorizo with Mango Aioli, sounds delish. Come indulge your taste buds and experience the ecstasy delectable food brings to the discerning palate by spending the evening with Chef Irie.

Are you ready to tantalize your taste-buds? Here is a sneak preview of what’s on the menu for Thursday. Be ready for an explosion of flavor as the food melts in your mouth.

Mussels Chorizo
¼ cp      olive oil
1 ea      shallot, chopped
2 tsp      chopped garlic
1 tsp      Scotch bonnet pepper, finely chopped
2 tsp      fresh thyme leaves
1 cp              ripe mango, medium diced
½ cp      chayote squash, medium diced
1 cp       Spanish Chorizo
30 – 40 ea   Fresh Mussels
2 cps      white wine
3 Tb      butter
¼ cp      chopped cilantro
              Salt & pepper to taste if needed

Method:
1.   Add oil to pan on medium heat then add shallots and sauté for about 1 minute then add the garlic, pepper and thyme.  Sauté for about 2 minutes then add the mango & Chayote and sauté for another minute before adding the Chorizo.
2.   Cook for about 2 minutes then add the mussels to pan. Spread out and then add the white wine. Cover the pan and reduce the heat some and let mussels steam for about 5 minutes. Add butter and chopped cilantro and cook for another minute. Check seasoning and then remove from heat and serve with mango aioli and a couple slices of toasted baguette bread.

Chef Hugh is a personal chef and caterer who works with some of South Florida’s top athletes and entertainers like former Miami Heat basketball player Lamar Odom as well as other high profile celebrities and athletes in our area. Hugh Sinclair, the Executive Chef and owner of Irie Spice Inc., hails from the Caribbean Island of Jamaica, where he grew up on a sugar plantation. Before relocating to the sunshine state, Hugh migrated with his family to New York. Hugh always had a passion for cooking and felt right at home in the kitchen. After working several years as an architect, the yearning to create culinary masterpieces vs. architectural aesthetics overtook his desires. It was then that Hugh enrolled in Johnson & Wales University’s Culinary Arts program embarking on his culinary journey.
