A study by USDA states that dairy cows can daily produce about 80 pounds of manure. Associate Dean for the University of Florida's Institute of Food & Agricultural Sciences, Dr. Saqib Mukhtar said that cows have a special organ-rumen. In this organ, tiny microorganisms not only break down the food but also release gas. Dr. Mukhtar explains that when the cows poop these microbes continue breaking down the manure which results in releasing more gas that primarily consists of methane. He also adds that we are wary of the ill effects of methane on our environment. Each methane molecule is 21 times more potent than CO2 and these GHG contribute to drastic climate change that results in storms, rising sea levels, and other calamities. It is a well-known fact that dairy and beef cattle farms' contribution to greenhouse gas emissions is 2 percent and in 2018 alone, this 2 percent resulted in 1 billion tons of GHG gases, says Climate Watch Data. To curb greenhouse gas emissions by processing manure Alliance Dairy leverages an advanced anaerobic digester. 140 feet wide and 12 feet underground, this anaerobic digester appears as just another concrete structure from the outside covered with metal pipes; however, it is professionally built and installed for effective manure processing. "The internal environment of the digester works similar to a cow's rumen. There is also a provision of capturing the gas and preventing it from getting released into the atmosphere." Mukhtar explains that the manure has to sit in the oxygen-free environment inside the digester for almost a month where the bacteria break it down. Methane is captured and pumped into a generator to produce electricity which is directly sent to the power grid. Alliance Dairy saves a considerable amount of money on energy bills every month.
