TORONTO - Aug. 1, 2023 - PRLog -- Craft beer enthusiasts in Toronto can get excited about a groundbreaking  addition entering the local market. Miski Brewing announces the launch of their first Organic Gluten-Free Quinoa Craft Beer, Ancestral Ale, which they debuted at the Toronto Beer Show on July 28th to 30th.

"We recognized a lack of options for quinoa-based beer in the region and saw an opportunity to offer a sustainable, clean beer with exceptional taste."

What sets Miski Brewing beers apart is the use of 100% quinoa, a nutrient-rich ancient grain known for its exceptional health benefits. This innovative use of quinoa in beer production enhanced the overall drinking experience but offered challenges in the brewing process. Working for 2.5 years with the Niagara College Food & Beverage Innovation Centre  (FBIC) during the pandemic, their brewing experts mastered the art of balancing quinoa's natural nuttiness with carefully selected hops and yeasts.

"Choosing to use quinoa as the sole grain in the brewing process was far from simple," said Adrian Popowycz, Bewmaster Professor and  Program Coordinator at Niagara College. "We had to find creative ways to produce the beer as the quinoa grain can clog up the traditional lauter tuns, making it challenging to obtain the necessary sugar extract," shared Popowycz. "After several processing and equipment explorations, they were able to find a specialised piece of equipment, a mash filter, that allowed us to obtain the volume of extracts needed to create a commercially viable product."

The result was a truly exceptional and unique craft beer with a smooth and distinctive flavour profile. Miski's first recipe, Ancestral Ale, is a pioneer in the world of all-quinoa based beers and offers a refreshing twist on traditional beer with its floral aromas and citrus notes.  In addition to being gluten-free, Miski Brewing Craft Beers are also Certified organic, Kosher, and Vegan.

"We believe that great beer should be enjoyed by everyone, regardless of dietary restrictions or preferences," said Irivarren. "We want beer enthusiasts, health-conscious individuals, and anyone seeking a fresh and delightful drinking experience to try our beer and join us on this exciting journey."

Miski's Organic Gluten-Free Quinoa Craft Beer will be available for purchase at select LCBO locations later this summer.

"It's the cliché thing but it's true, this is the classic story where perseverance, hard work, blood, sweat, and tears really did pay off," said Popowycz.
