The Forest menu's selection of speciality dishes is complemented by the Meadow menu of mouth-watering vegetarian and vegan offerings; mix and match between menus is welcomed. Every dish incorporates forest elements and the entire culinary journey is elevated by skilful pairings of wines or bespoke non-alcoholic creations. A plush décor of gentle green and rich brown tones creates a soothing ambience with accents of blackberry and beige. Cool stone echoes rougher elements of the forest environment while soft velvet and warm wood furnishings encourage guests to relax and linger. Head chef Michael Helfrich and his team embrace the rhythm of the forest, transforming its wealth of flavours and aromas into an exceptional cuisine that thrills and satisfies all the senses. Ancient traditions such as smoking and fermenting intensify flavour. Combining them with the latest advances in culinary science and artistry promises a memorable gastronomic experience. Seasonal signature dishes on the Forest menu include prime Pinzgau beef cuts with pickled blueberries, bone-marrow dumpling and creamy parsnip purée, while Meadow menu diners feast on a delectable savoury stew of pickled mushrooms served with sautéed winter vegetables and potato roulade. At silva seasonality and regionality are de rigueur: both Forest and Meadow menus change daily in step with nature, using ingredients only when the time is right. Nothing goes to waste: leftovers are all recycled. Helfrich honed his culinary skills in prestigious kitchens in Austria and Switzerland and at Copenhagen's world-famous Noma. He returned to his Pinzgau homeland ten years ago to live and work in tune with nature, bringing his flair for unique tasting experiences to silva. Sommelier Johann Koller curates the Forsthofgut's fine cellar and silva's perfect liquid pairings.
