Michelle Obama’s Holiday Shortbread Cookies

1 1/2 cups unsalted butter, left out on the counter for about 1 hour to soften
1 1/2 cups plus
2 tablespoons sugar
2 egg yolks
3 cups cake flour (not self-rising)
1 teaspoon each orange and lemon zest
2 tablespoons Amaretto (almond liqueur)
1/4 teaspoon salt
1 beaten egg white
Chopped nuts or dried fruit, optional

1. Preheat the oven to 325 degrees.
2. In a bowl, using an electric mixer, mix together the butter and 1½ cups of sugar.
3. Add the egg yolks, one at a time, and beat until smooth.
4. Stir in flour, zest, amaretto and salt, and mix only until everything is incorporated.
5. Spread the dough evenly onto a jelly roll pan and brush the top of the dough with the egg white and remaining 2 tablespoons of sugar.
6. Sprinkle with nuts or fruit if desired.
7. Bake until golden brown, approximately 25 minutes.
8. Cool for a short time, then cut, while still warm, into bar shapes.
