By: Park Hyatt Seoul ‘The Ark of Taste’ is a worldwide campaign begun in 1996 by Italy’s Slow Food Foundation, which identifies traditional ingredients and heritage cuisine, helping regional agricultures by drawing attention to the risks of extinction. To be nominated for the inclusion of ‘The Ark of Taste,’ products must have a distinctive taste, must be linked to the environment, society, economy and history of a specific area, must be at risk of extinction and produced using traditional methods. The executive chef of Park Hyatt Seoul has chosen four of the eight Korean ingredients registered on ‘The Ark of Taste’ - Yeonsan Ogye black chicken, Jinju Anjeunbaengi wheat, Ulleung Chik-so cattle, Jangheung Chungtaejeon tea - to create this high-quality dinner menu. The ingredient of the first dish is Yeonsan Ogye chicken, Korea’s natural monument number 265, which has been raised as a stamina health food since the Koryo Dynasty. Created as an appetizer, Yeonsan Ogye is rolled with foie gras, popular as one of the energy food in Europe. The second dish is created using Jinju Anjeunbaengi Wheat, native Jinju wheat that has been grown since 300 B.C. The wheat is good for digestion, high in sugar and has a delicate flavor. Anjeunbaengi Wheat cannelloni, made with king crab, fennel cream and tomato consommé, provides the unique harmony of the intense Anjeunbaengi wheat flavor and the creamy sauce. The third dish will be made of Ulleung Chick-so beef, which comes from Korean cattle with dark tiger-like stripes on its body and is considered as an endangered species due to the export of Korean cattle to Japan during the period of Japanese occupation. This beef is higher quality than other Korean cattle, containing a greater percentage of unsaturated fat. Cornerstone presents grilled Chick-so entrecote, juicy, richly flavored and well-marbled, as well as Chick-so rump roast, which is tender and low in fat. The dinner’s dessert will utilize Jangheung’s Chungtaejeon or Don tea with a long history of 1,200 years. The tea has been nominated as one of the ‘Presidia’ ‘The Ark of Taste’ dinner will also be offered as “Masters of Food & Wine” event on Thursday, September 25.
